In Ghent, Thursday is Veggie Day. Ever since 2009, all meals in all of Ghent’s schools and day care centers have been plant-based on Thursdays. With 11,000 students In Ghent schools, that’s 156,000 vegetarian meals a year.

But the impact has been even bigger than that. The city of Ghent has done such a good job promoting this program that private businesses have gotten on board as well: 90 restaurants and 20 hotels have Veggie Thursdays. A jaw-dropping 50% of Ghent residents go vegetarian on Thursdays, and those who do participate spend an average of two more days each week eating plant-based meals.

What’s next?

With so many people in Ghent going meat-free more and more, why not expand the program to one additional dedicated vegetarian day in school canteens per week by 2020?
